Olive's new pet and skinny mojito

Yesterday Lee (Bailey's long time boyfriend) was surf fishing and caught a little pompano.  It wasn't going to feed us dinner, but Olive seemed to think it was a new pet for her.  She was obsessed.

I also tried to copy Ally Baker's famous mojitos.  I butchered her exact recipe, but used some of her signature ingredients and they were well received.  Really refreshing for our cocktail hour on the porch (and a lot lower in calories than the typical sugary mojoito).

1-2 shots (improvised with Vodka, but usually would use Rum)

Fill glass with ice

Squeeze about 1/3 of a lime into the glass

Chop up mint leaves and put into the glass

Fill class up with 1/2 club soda and 1/2 Diet Sierra Mist

Garnish with wedge of lime and mint sprig

Enjoy!

Homemade Party Mix & Dogs on the Beach

Party Mix

This is a treat we always have on our annual beach trip.  Here is the variety Bailey made for us this year.  I love to have a little bowl during cocktail hour on the deck.

1 small bag Goldfish (about 2 c.)

2 c. peanuts

4 c. wheat Chex

4 c. rice Chex

2 c. Cheerios

(you could add some pretzels, but we opted not to)

Melt 3 T butter in microwave.  Stir in 1/4 c. Worcesterchire sauce, 1/2 t. garlic salt, 1/2 t. minced onion, a few dashes of hot sauce, 1/4 t. black pepper.  Toss the cereal/peanuts/goldfish in the sauce until all of it is coated.

Put in pan - bake on 250 for 1 hour - 1.5 hours (until crunchy).  Stir every fifteen minutes.

Enjoy!

The cocker spaniels have been enjoying the ocean.  You can see below that Olivia never beats Maysie to the ball!

Fall Fashion I'm Coveting

Every married couple has a different way of making their finances work.  For us I have a set "allowance" each month that I can spend on anything my little heart desires.  That may sound strange, but it works for us (and it's a darn good thing I'm not our CFO!).  That said, Josh likes to give his opinion frequently.  Today on the way to the beach he announced, "You really need some new clothes for fall -- please don't spend your money on more things for the house -- you NEED some more clothes."

Chest is finally finished...and other misc happenings from the week!

After lots of blood, sweat and almost tears -- the chest is FINALLY finished.  Don't look too closely, it's certainly not perfect, but I'm pleased with the end result.

No project is ever complete without the superintendent.

I think the pulls really made it and they were very reasonable.

Last weekend we went to AB with the Farrells.  Happy 5th anniversary, Andrew and Laura!  The weather couldn't have been more perfect and we ate lots of yummy seafood. 

One of our favorite McKinney employees, Vincent, is leaving to head to Afghanistan to work as a civilian serving our armed forces.  We will really miss him!  We had a potluck in his honor and he requested I make him mint Oreo truffles.  I got a little carried away with this corny pun.  They were deluxe -- I actually liked them better than the original oreo truffle flavor.

Friday night Kathryn, Rachel and I went to Cafe Caturra to celebrate Kiki's 26th birthday!

I enjoyed their French white wine flight (only $10!).

Then we headed to the State game yesterday -- I was not a fan of the misty cold weather for a mid-September game.

We are now at the beach for a much needed week of R&R with the fam (sadly, A couldn't get off work!!).
