Craig's List Find & Memorial Day

Happy Memorial Day!

I'm sorry I've been so slack this month -- after returning from our trip work has been insane and I haven't had the energy to look at a computer in the evenings.

I made my first Craig's List purchase today and I'm absolutely thrilled -- only $50 for a bench to put at the foot of the bed in the guest room (a work in progress).


I'm going to recover it in this fabric -- leftover from Euro shams I had made for the bed.



I'm considering this headboard too (also Craig's list)...what do you think?  I'd obviously need to change the fabric, but it's a steal too.

 
We headed down to Atlantic Beach on Friday to spend Memorial Day with the Otto family.  The weather was wonderful and we had a great time. 




I'll post more from Europe and my trip to Charleston later this week.

Dear Josh - my birthday wish list

Josh- I know you think I don't "need" more dresses, but with 14 weddings this year, yes I do! :)  My favorites of the dresses are the bottom 4 -- love the green one!

Trip Recap - Best of Munich

I wasn't going to share a lot of our trip on the blog, but I've gotten requests so I'll give you some highlights.  Today's post is all about our time in Munich (and side trip outside to Dachau).  You'll notice lots of the same pics of each couple or the girls and then the boys.  The beauty of traveling with 4!  Don't worry, the little time we did break off from the Matthews I also subjected Josh to some of his favorite self-timer photos.














We ate so much sausage and pretzels and drank enough steins for a while...bathing suit season is going to need to be a bit delayed for the Ottos.

Next up...Austria and the time Josh threatened to divorce me "next week."  Ha!

Leaving on a jet plane

We head on our adventure tomorrow with Rachel and Todd.  Say a prayer she doesn't kill us driving our rental car around Europe.

Asian Peanut Dressing

Today Bailey (the middle sis) is sharing a recipe on my blog.  She is such a good and creative cook!  I can follow a recipe, but I don't have the innate ability to whip something up with whatever ingredients I have in the fridge like she and my mom do.  I'm trying to learn though!


Ingredients
1/2 c. peanut butter (I used crunchy but creamy would probably work better and then you'd just throw in some whole peanuts for the crunch)
4-6 T Lime Ponzu sauce (To your taste, but I could drink the stuff! You could use an additional T of soy and another lime to get about the same flavor if no ponzu available)
1 T reduced sodium soy sauce
Juice of half a lime
1 inch chunk of fresh ginger
Pepper to taste

Pulse in a food processor or blender.  If it is too thick, add chicken broth (or water) 1 T at a time.  No oil is needed, as the peanut butter acts as the emulsion factor.

It was so good, cheap & EASY!  I put it on whole wheat noodles while they were still a little warm and added julienned carrots, pepper, cucumber and a shallot.  I dumped the warm noodles on top of the shallots to cook them a tiny bit so there wasn't an oniony flavor.  All other ingredients can be tossed in whenever.  You could use any crunchy vegetables on hand such as snap peas or tomato.

Den Progress

I don't have a ton of true "before pictures" but prior to us getting married the entire house was definitely much more of a bachelor pad.

The den had two themes that I have more or less eradicated.

Theme #1: golf


Theme #2: dark


I wanted to lighten the room up and also add some more vibrant colors.

A big weekend

Friday a.m. I headed to Folly Beach for Ellen's bachelorette weekend.  We had the best time and the weather was perfect!

Saturday I headed back to Raleigh for Barbara and Lake's engagement party.

It was such a fun weekend with friends, but I am exhausted today after two big nights.
