Toffee Bars

First, just downloaded instagram on my iPhone and I'm hooked.  Very fun little app that actually makes the pictues look nicer than my little Canon.  If you haven't downloaded it yet, go do it!

My mom has been making toffee bars at Christmas as long as I can remember -- they have become a tradition and it doesn't feel like Christmas without some around the house.  I am a sucker for salty-and-sweet food combination!



Toffee Bars
Heat oven to 400.

Line cookie sheet with aluminum foil. Layer the sheet completely with saltine crackers (you'll probably need to gently break to fit in aroudn the edges).

In a pot, put 2 sticks margarine and 1 cup packed brown sugar.

Stirring constantly, bring to a boil and stir at a boil for 4-5 mins. Mixture should be light brown and frothy.

Pour over crackers and spreader quickly evenly with a knife.

Bake at 400 for 5 minutes. Pour a 12 oz. bag of chocolate chips on top and return to oven for 2 minutes.

 Immediately spread out chocolate over crackers and then sprinkle at least 1 cup chopped pecans on top. Push down on nuts so they will stick nicely.

Chill 2 hours before breaking into pieces.
